- 1) Confirmed with the operator that the sanitizing concentration is not measured to ensure it is at least 100 ppm minimum (e.g. - for chlorine/bleach). Subsequently, please purchase chlorine test strip paper to ensure the above concentration can be confirmed following the sanitizing step.2) Sink stoppers are not in good working order and are required to be replaced - there are a total of two (2) at this facility.

- Observed that there were no thermometers in all refrigeration and freezer units (including the walk-in cooler) to monitor proper cold holding temperatures (which should be 4 C or less for the refrigerator and -18 C or less for the freezer units).Update on July 16, 2024: there is a working thermometer in the walk-in cooler.Subsequently, please purchase and install accurate thermometers in all units.August 13, 2024:No purchase of thermometers as of yet - operator is planning on purchasing at a store and not on-line.

- Observed an expired 2023 Food Handling Permit in the kitchen facility at the time of inspection - please check your past emails for the 2023 - 2024 food handling permit from our EPH Office in Red Deer.If cannot be found, please reach out to our Department so another valid food handling permit can be emailed to you for posting.August 13, 2024:In-person chat with the Village of Ryley who are ultimately responsible for the food handling permit and payment since the building is owned by the Village of Ryley.Whereabouts of the 2024 - 2025 food handling permit is unknown at this time. Have asked the Village of Ryley to check their emails to see if they have previously received an invoice for the food handling permit from AHS EPH.

- Observed a significant grease spill and an accumulation of both grease and food debris underneath the Garland oven and gas cooktop and which requires clean-up.Prior to clean-up, the gas line (rigid metal pipe) would more than likely need to be disconnected prior to moving the cooking equipment out to facilitate this required cleaning.That being said, our Department would recommend changing the following:1) Change existing gas line to a flexible hose.2) Installing/retrofitting casters/wheels on the bottom of the cooking equipment to allow easier moving of equipment for cleaning purposes.Following discussions with the operator on December 28, 2023, will need to follow-up with the Village of Ryley CAO to assist in completing the above required cleaning task.
