The first basin is used for cleaning and washing with soap to remove debris, the second basin is for rinsing, and the third basin must be filled with a sanitizer solution (100 ppm chlorine mixture or 200 ppm quat solution). Dishes must be submerged in the sanitizer for two minutes before being air dried.
