      • Since you are in the position of having to process the dish washer manually, and you are using bleach to sanitize - staff report that they do not have test strips for checking on the sanitizer concentration.Please obtain chlorine test strips ASAP, while you are manually processing dish ware.March 19, 2024 - bleach is still being used as a sanitizer for pots and pans that do not fit in the dish washer and for countertops.Therefore you need to have chlorine test strips in order to check on the sanitizer concentration.

      • Cold food holding temperatures were satisfactory, EXCEPT for the Basement storage room - upright freezer #1 was -7 C ( it should be at -18 C or colder ).This unit was turned to a colder setting.
