- The sanitizing step is not occurring when staff are manually washing dishware at the 2-compartment sink. Also a drainplug is required to ensure that dishware can be immersed in the 100 ppm chlorine solution during the sanitizing step.- Proper manual dishwashing procedures are: Wash with warm soapy water -> Rinse -> Sanitize -> Air Dry
