      • An open bag of dry food was observed stored directly on the floor. - Ensure all dry food is stored in rodent-proof containers with tightly fitting lids and kept off the floor to prevent contamination and pest access.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No paper towels were available at the hand sink located at the server’s counter in Caribou Kitchen. Staff refilled the dispenser immediately upon notification, correcting the issue during the inspection.

      • The concentration of chlorine sanitizer in the rinse water of the glasswasher at the bar was measured to be 0 ppm. - All glasses/utensils must be washed and sanitized in the functional dishwashing machine in the kitchen. The concentration of the sanitizer in the rinse must be monitored and maintained at 100 ppm.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The concentration of sanitizer in the rinse of the glasswasher is not being tested before the start of the operation for the day.
