    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Floors including staff washrooms must be cleaned at a frequency that prevents the build up of dust, dirt, and food debris.
    • 37(1) If directed by an inspector, a food establishment must maintain records that demonstrate the quality assurance system used to ensure food safety in the processing or preparation of a food.
      • Daily temperature logs must be kept of all cold holding and hot holding units to monitor storage temperature of food.
    • 42(1)(b) An Inspector may require an operator to implement sampling and testing procedures to demonstrate any of the following: (b) that an established procedure does not result in the adulteration of food; and
      • Processing procedures for kimchi must be verified by a third party laboratory and results provided to Public Health Inspector.
    • 47(1)(a) An operator must ensure that all food in the food establishment is (a) labelled and identified as being from a source that is subject to inspection; or
      • Any food that is bottled and sold retail on site must be labelled identifying the source.
