- The cooling of potentially hazardous food is inadequate.
- Large volumes (large cooking pots) of sauces must be cooled as rapidly as possible after cooking. To cook quickly, use shallow pans, an ice water bath, or ice wands. Cool from the cooking temperature to room temperature in two hours maximum, then from room temperature to the cooler temperature (4°C) within four hours. Cool rapidly.
