- The chemical dishwashing system was not dispensing a sufficient amount of sanitizer during the rinse cycle. The sanitizer concentration appeared to have dropped below the appropriate level. The operator was instructed to replace the sanitizer.The operator is to wash dishes manually using a 3-compartment sink until the sanitizer is purchased and properly installed.
