      • Several pans and other cooking utensils were observed being stored directly on the floor, or in containers on the floor that are absorbent (cardboard or with holes).Ensure that food and utensils are stored off the floor or are in fully enclosed non-absorbent containers.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • 1) Test strips for chlorine sanitizer could not be identified during inspection. Ensure test strips are available for use whenever preparing sanitizer. 2) A thermometer capable of recording maximum temperature was not available to test the heat-sanitizing dishwasher.Ensure a probe thermometer with a maximum temperature setting is available for use. Recommended to acquire one that can pierce foods to double as an effective probe thermometer.
