- Observation(s): Large pail of sanitizer present in the area behind the front counter had zero quats present in the solution. Sanitizer pails must be changed frequently to ensure a concentration of 200ppm solution is maintained. The quats dispenser was dispensing a 200ppm solution as verified by test strips. High temp dishwasher rinse temp was 73C as verified by a max recording thermometer placed inside of the unit.

- 4 - Are proper refrigeration, freezing and thawing procedures followed?
- Observation(s): Espresso line cooler noted temperature of milk 6 ° C to 9° C. All temperature logs monitored are good until time of inspection. for this line cooler. Cooler was moved to clean underneath. Manager identified the electrical plug partially unplugged behind the unit. Unit plugged back in. The Manager will contact the EHO to confirm the temperature returns to normal. Continue monitoring on temperature log to ensure not malfunctioning. Recommend installing a high gauge extension cord to allow movement of cooler to prevent unknowingly unplugging the unit.
