      • No hair control by one staff with shoulder length hair.Please ensure food handlers have proper hair control.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The sandwich cooler was unplugged. Sandwiches were measured between 10.8 to 14.9 degrees C. Discarded all the sandwiches. Store all cold perishable food at 4 degrees C. or below. Check and record coolers temperatures 2x daily.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The maximum temperature of the high-temperature mechanical dishwasher was measured at the dish level using a maximum-registering thermometer to be 70.3°C, then 73°C (tested twice). However, a maximum-registering thermometer was not available on-site. Please obtain a maximum-registering thermometer to test the water temperature at the dish-level before use. Please ensure to record this temperature daily instead.**OBTAIN A MAXIMUM-REGISTERING THERMOMETER. RECORD TEMPERATURES DAILY.
    • 15. Is the facility free of a pest infestation?
      • October 4, 2023, inspection:1) Numerous fruit flies found in the pastries display case and on the white tile wall by the teas and drink toppings. Drink syrups may attract the flies to the tea area wall, please continue to clean this area more often.(Manager stated that the pasties in the display case will not be sold to customers).2) Black flies were also found in the facility. September 29, 2023, inspection:There were several flies noted during the inspection. The inspector informed the staff/manager to contact their pest control company to remove the flies from the facility. The manager mentioned to the inspector that their company prohibits the use of fly traps in the facility. Thus, please ensure to come up with other methods to remove the flies from the facility. Otherwise, fly traps or fly lights may be used, or any other methods deemed effective by a professional pest control company.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Dust build-up on the front service duct pipes.Clean the duct pipes.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The QUAT-based sanitizer solution used to sanitize food-contact surfaces was measured at 50-ppm. The staff/manager was instructed to create a new sanitizer solution, which was measured at 200-ppm. The inspector informed the staff/manager that a 200-ppm QUAT sanitizer solution must be maintained at all times during the operations. Less than 200 ppm QUAT concentration means inadequate sanitization and more than 400 ppm means that QUAT residues could stay in food-contact surfaces, which contaminates food. Please ensure to check the solution every 2-4 hours throughout operations.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • The dry storage cabinet on the lobby was not kept locked. The inspector informed the staff/operator that food storages must be kept locked when accessible to customers to prevent potential tampering/contamination of the food by unidentified personnel. Please lock the cabinet doors at all times.
