    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1) Quat sanitizer was found in a sanitizer pail and a shallow container near the espresso machine at 50 or 100ppm. The sanitizer solution was changed during the inspection and was at a concentration of 200ppm as required. Ensure Quat sanitizer is at a concentration of 200ppm for adequate elimination of microbes.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) A carton of coconut milk was found on a food surface near the drive thru window. The temperature was 11 degrees Celsius. The carton was put into a cooler unit. Ensure that perishable items like coconut milk that are routinely used at the drive thru window are kept at room temperature for only 2 hours or stored at or below 4 degrees Celsius to prevent the growth of microbes.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1) Pest control records were not available at the time of the inspection. Ensure that pest control records are onsite.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Areas around and under the espresso bar were found dirty. Ensure that hard to reach areas are cleaned and sanitized regularly.2) Bottom shelves of cooler units were found with food debris. Ensure that all shelves in the cooler units are cleaned and sanitized regularly to prevent food contamination. 3) Food debris was found throughout various areas in the facility, especially in hard to reach areas under shelf units, behind doors, behind carts. Ensure that all floor areas including the hard to reach areas are cleaned and sanitized regularly to prevent food contamination and the attraction of pests.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • 1) An open dumpster was found open and had a crow inside. Ensure that the dumpster remains closed to prevent attraction of pests including crows.
