      • Facility was operating in contravention of their permit restrictions which state "no deep frying or extensive grease producing cooking".

      • Food handling not in agreement with and in contravention of previously agreed upon restrictions in conjunction with the Fire Department have been and are being performed.The owner has been directed and agreed to cease any and all cooking that involves deep frying or the extensive production of grease for both commercial and personal use. This includes and is not limited to the following: usage of the unenclosed electric deep fryer, stove top stir frying of meats, seafood, vegetables and any combination therein. Food handling/cooking that does not involve deep frying or the extensive production of grease may continue, such as the preparation of hot and cold beverages, baking using the range hood oven or commercial standup oven, steaming of food items using the stove top, microwave etc.

    • 02. Is all food in this facility from an approved source and/or properly labelled?
      • Deep fried chicken skin in containers was initially observed to be available for purchase on the counter. The owner indicated that the product was prepared at home due to restrictions put in place by the fire department from the lack of commercial ventilation for deep frying/grease laden production. The product was removed from sale as directed and the owner was advised to consider utilizing an air fryer at the store instead of at home. Follow-up in approximately one weeks' time to confirm whether or not the product will be prepared using an air fryer as discussed, or discontinued.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Three trays of uninspected eggs intended for pickup by a family member was observed on the counter next to the new exterior kitchen and a single tray on the lowest shelf in the first compartment of the walk-in cooler. The owner was directed to relocate the tray on display to the three full boxes already stored at the back of the walk-in cooler, which is expected to be picked up by the owner's family member mid afternoon. The three trays on display will be relocated into the cooler as good practice.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Additional containers of porridge and sisig were also on display in front of the hot dog warmer unit - these containers were at room temperature. The products were relocated to the walk-in cooler as the owner confirmed that they were to be picked up in the early evening after the customers finish their work shift. The owner has indicated that this adjustment will continue moving forward.

    • 03. Is all food in this facility fit for human consumption and not unwholesome, spoiled, or adulterated?
      • The smaller jars of mason jar canned chili garlic oil on display where the baked bread prepared on-site were found to be inadequately sealed as the buttons on top could all pressed. The Owner/Operator was notified during a FaceTime call during the inspection and the products were removed from sale by the staff member on duty.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The bleach-water sanitizing bottle in use did not have any detectable concentration of chlorine when checked using test strips. The solution was replaced during the inspection and was verified to be at 100 ppm chlorine using test strips.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towels not available at the handwashing sink, the staff member provided a roll for use when notified.
