- The commercial dish washer had the following temperatures:Wash cycle was 98 F, rinse cycle - display not working, internal 64 C (must be 71 C for the internal reading as a minimum).Corrective ActionThe dish washer should not be used as it is not reaching the proper sanitizing temperature.Have the dish washer serviced - to have the display for the rinse cycle replaced, if possible, and - to have the rinse cycle temperature increased, so that an internal temperature of 71 C or hotter can be achieved.Note - there is a stainless steel 3 compartment sink available in this kitchen to manually process and sanitize dishes.
