    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Several tires were being stored in the warehouse, among equipment and supplies for the restaurant. Tires and all other items not pertaining to the Tanuki Kyoto Sushi food business must be stored in a separate area of the warehouse, away from all food and restaurant equipment and supplies.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Extreme accumulation of ice was noted on several of the chest freezers, some to the point that the lids do not close completely.Freezers require a defrost cycle to remove the build-up of ice and ensure that the lids close properly.

      • Several chest freezer lids are being held together with electrical tape. Equipmemt must be smooth, water-resistant, easy to clean and in good repair. The electrical tape must be removed, and the freezer lids repaired/replaced.
