    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A thermometer is not available to measure and record meat temperatures at the start of transport and at the last point of delivery. Ensure that a thermometer is obtained and placed inside the unit and temperatures are recorded daily at the beginning of delivery and at the longest point of travel and delivery.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The surface of the box used to hold meats during transport is noted to be worn away and is no longer smooth and easily cleanable.Ensure that the surface is made to be smooth and easily cleanable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The outside areas of the meat transport container is noted to be covered in dirt and debris. Ensure that this unit is cleaned. Operator is not transporting meat until November and the unit will need to be inspected at that time for cleanliness.
