  1. Routine Inspection

    1 infraction

    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: No active sanitizer concentration was detected in sanitizer containers or spray bottles at the time of inspection. The facility uses lactic acid as its sanitizer. (Public Health Significance): The sanitizer concentration noted was outside the recommended range for lactic acid sanitizers and therefore not likely to be effective for sanitizing food-contact surfaces, according to Ecolab guidelines. Improper sanitizer concentrations can lead to ineffective disinfection or residual build-up, which may compromise food safety.
      • Corrective Action: Sanitizing solutions must be changed as required to consistently maintain an effective concentration in accordance with the manufacturer’s specifications. For effective sanitization of food-contact surfaces, lactic acid sanitizers typically require a concentration of 704–1875 ppm, as outlined in Ecolab guidelines. At the time of inspection, the manager noted that the dispenser will be serviced and confirmed that Ecolab had been contacted immediately.

    • 306 - Repeat Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Ceiling tiles around the fume hood on the north side of the kitchen and air vent cover over the dishwasher had an accumulation of dust which may fall off and contaminate foods and/or clean dishes and cookware.
      • Corrective Action: Ceiling tiles and air vent covers with an accumulation of dust must be cleaned and kept free of dust. Also, the Sanitation Plan for this facility must be amended to identify this issue, detail how cleaning is to be done (e.g., air vent covers manually washed or run through dishwasher), and a frequency of cleaning must be set. Note: this issue was also noted during the last routine inspection on May 8, 2019.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Walls and ceilings in multiple areas of the kitchen, and in a few areas of the Nass and Skeena serveries are damaged and/or worn. Locations in the kitchen include, but are not limited to: ceiling by dry storage room; walls in dishwashing area, wall by kitchen office; wall over door to seating area; and wall by hand washing sink.
      • Corrective Action: Damaged and worn walls must be repaired, refinished and maintained with surfaces that are smooth, impervious to moisture and easy to clean. Damaged and stained ceiling tiles must be replaced. Note: the issue of chipped and peeling paint was noted during the last routine inspection on May 8, 2019.
    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Walk-in freezer was overstocked to such an extent that there was little room to move around. This is interfering with keeping the walk-in freezer organized and with cleaning up spilled foods.
      • Corrective Action: Additional freezer space must be provided to ensure routine cleaning can be done and foods can be kept organized (e.g., to facilitate first-in first-out practice).
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Freezer in Nass servery not maintaining a temperature of -18°C or lower; foods (ice cream) were thawed.
      • Corrective Action: Thawed food items to be discarded and freezer must not be used until it can maintain a temperature of -18°C or lower. If freezer is repaired, it must be cleaned and sanitized before being put back into service.
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: There was a build-up of frost & ice around the door of the walk-in freezer to such an extent that it was not possible to close the door, and it's my understanding that this is due to the seal on the door needing replacement.
      • Corrective Action: The frost & ice around the door of the walk-in freezer must be removed so the door can close, and the seal on the door replaced so as to prevent the build-up of frost & ice within the walk-in cooler.
