    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): Expired chlorine test strips were observed for measuring the sanitizer concentration of food contact surface sanitizer. Ensure valid chlorine test strips are available to staff onsite.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Jars used for filling food observed ready to use. It was noted that the jars are labelled prior to filling the food products. This practice may result in contamination of jars, leading to cross-contamination. Ensure jars are properly sanitized before filling the food products. Label the jars after the food products are poured in and jars are sealed. Sanitizer bottle was measured at 0 ppm chlorine concentration. A concentration of 200 ppm chlorine is required to allow for adequate sanitizing of food contact surfaces. Refill the sanitizer bottles prior to food preparation and use chlorine test strips to ensure a 200 ppm chlorine concentration is measured in the sanitizer spray bottles.
      • F2.3B Manual dishwashing procedure must provide sufficient washing and sanitizing action to remove contamination.
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Wooden spatulas used for stirring soup were observed degrading. This may result in physical contamination of food. Operator was instructed to replace the wooden spatulas with smooth, durable, non-absorbent, and easy to clean material.
      • F2.5A All equipment, utensils and food contact surfaces used on the premises must be kept in good working order to ensure the sanitary handling of food.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): No paper towel was observed at the handwashing station. This may lead to inadequate handwashing of food handlers. Refill the paper towel in the dispenser.
      • F2.7C Handwashing station must be supplied with single-service product for drying hands.
