- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Spray bottle of quat sanitizer measured 400PPM quats. Staff directed to dilute the sanitizer solution so that it was at 200PPM quat or to switch to the chlorine sanitizer solution (100PPM chlorine solution). Ensure that an approved sanitizing solution is mixed and available for use whenever the business is in operation.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Quat test strips were unavailable upon request. Ensure that you have test strips for each type of sanitizer used in the facility.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- 1. The hand wash sink was blocked as the sink was used as counter space to store ingredients for the cinnamon buns. Do not block the hand wash sink. Ensure that the hand wash station is accessible at all times. Corrected during inspection.2. The hand wash sink was not stocked with paper towel and was not equipped with a paper towel dispenser. Ensure that paper towel is available at the hand wash sink for hand washing. Install a paper towel dispenser at the hand wash sink.

- Mouse droppings were noted in the following areas: corners of the floor and in the paper, storage shelves below the front counter. Please clean as discussed.
