- 2. FACILITIES TO MAINTAIN PROPER TEMPERATURE
- All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities. The infant room refrigerators are holding 45-47 f temperatures, infant formula which was being brought in by parents starting at 7;00 AM was moved to the kitchen refrigerator and both infant room coolers were tagged held for inspection until repaired or replaced and inspected by the Chicago Department of Public Health.. E-mail a tag removal request to [email protected] when ready for re-inspection.

- A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. The certified manager was not present at the time of inspection. Infants formula is being reheated and breakfast served.

- All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Monitor and remove ice buildup in the reach in coolers.
- 38. VENTILATION: ROOMS AND EQUIPMENT VENTED AS REQUIRED: PLUMBING: INSTALLED AND MAINTAINED
- Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Old dried out toilets need to be repaired and maintained regularly or replaced.

- Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. Store bleach were it cannot spill onto childrens toys.
