      • Sanitizing of food contact surfaces is not being conducted using an approved method. While a preference to avoid chlorine-based products was noted, an approved sanitizer is still required to ensure adequate disinfection of utensils and equipment. Alternative options such as quaternary ammonium compounds or other food-grade sanitizers with a valid DIN may be used, or a high-temperature dishwasher capable of achieving appropriate sanitization temperatures may be utilized. Please ensure all food contact surfaces are cleaned and sanitized using an approved method.

      • Operator uses soap and water to clean equipment/utensils. Discussed using bleach/sanitizer as last step in step process. Operator did not have chlorine test strips on site. Discussed purchasing test strips.
