      • Floor dirty on and around grease interceptor. Clean noted area.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Cooked rice in vacuum packed was stored in hot water to thaw with a surface temperature of 42.4°C.The rice was reheated with the microwave to 78°C.2) Packaged bacon was kept on the counter to thaw in the front house with a surface temperature of 0°C.Thawing of potentially hazardous foods must be done under refrigeration at 4°C, completely submerged in cold running water or by microwaving.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Two uncooked/raw shell eggs were kept on top of the fridge in the kitchen with a time stamp of 12:43pm to 01:43pm. The inspection was conducted at 3:32pm. The eggs were discarded.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The plastic lining on the inner part of the door of the microwave in the back food prep area was torn.**Repair or replace food equipment.**Ensure all food equipment used in the facility is in good repair.
