- Logs to be completed daily for all coolers, freezers, hot holding (i.e. hot items brought over to bistro), any cooled items, dishwashers, and sanitizer concentration. Ensure logs are always available upon request. Recommend compiling into one log sheet for ease of use by staff. Example templates sent to operator. Comments Routine Inspection conducted. - Handwashing stations stocked with soap, paper towel, hot water. - Temperatures within protective ranges: coolers 60C * Note record keeping for temperatures to be improved. See violation below. - Dishwasher sanitizing at correct temperature. >71C at the plate measured, 82C final rinse temperature. * Recommend obtaining a dishwasher safe thermometer with max readout for validating sanitizing temperature of machine. - Food storage practices adequate. Items labelled, dated, stored off the floor. Food protected from contamination - potentially hazardous foods stored below ready to eat foods. - FoodSafe certified staff on site. - Bistro area - all food prepped in main kitchen and brought over for service. Hot held and cold held foods available. - Sanitizer available throughout facility. Sink and surface sanitizer, measured at appropriate concentration. Test strips also available on site. - Overall sanitation of facility satisfactory.
