- KITCHEN CEILING TILES:As discussed, acknowledge that the amount of dust accumulation on the ceiling tiles (particularly around the ceiling vents) is significantly less than on previous inspections in the past. This partially may be due to the previous work completed by an HVAC company in March 2024 that was initiated by the owner.At the time of inspection, observed that several of the ceiling tiles seem to have dust etched into the surface and that the existing ceiling tiles were made of a textured type finish that promotes these dust deposits.Subsequently, the existing kitchen ceiling tiles should be replaced with new ones that are completely smooth in finish. This type of finish should result in the reduction of these dust deposits and facilitate easier cleaning.Finally, note timeframe to complete which is September 27, 2024.

- Noted that hard ice cream is sold here and is normally seasonal during the spring and summer only.Buckets of ice cream are supplied by Ice Cream Depot from Nisku.As discussed with the owner, ensure the container of warm water for the ice cream scoop is changed minimum every hour and is a chlorinated solution (at least 100 ppm chlorine (e.g. - bleach)).

- WALK IN COOLER:As discussed with the owner, the existing concrete flooring finish does not appear to have adequate coat sealant and is not light in color which is required to easily see the dirt.That being said, you are required to reapply another coating to the concrete flooring and the coating should facilitate a light in color finish.Moreover, the lighting level currently in the walk-in cooler is inadequate which does not facilitate easier cleaning of surfaces and finishes.Another LED fixture is required (and can be electrically tied in with the existing LED bulb fixture) to provide more adequate lighting.OTHER REQUIRED WORK:3) Install another LED fixture inside the exhaust canopy hood (where previous one was located) and another LED fixture on the ceiling near the exhaust canopy hood.4) Replace missing light cover for ceiling fixture near the 3 compartment sinks and replace the other two light covers which are coated in grease and not sanitary.

- Currently, the level of cleanliness is satisfactory at the time of inspection.However, as discussed, our expectation is to maintain this level of cleanliness at all times. Failure to comply may result in our Department moving forward with legal enforcement to ensure this is maintained.Also, as discussed, the owner/operator is required to have a WRITTEN CLEANING SCHEDULE (for daily/weekly/monthly) tasks and email completed document to our Department for review and final approval.

- GRILL TOP EQUIPMENT (FOR COOKING OF DONAIR MEAT, HAMBURGER PATTIES & BUNS):Observed this equipment and the majority is not directly underneath the exhaust canopy hood. This is required to capture all the grease generated from this equipment. Moving forward, the owner may have to move other equipment to accommodate this underneath the hood.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) Exhaust canopy hood - observed significant accumulation of grease in the filters and requires cleaning and/or professional hood cleaning.2) Some of the ceiling tiles near the exhaust canopy hood were observed to be coated with a significant amount of dust (sticking to the tiles due to the grease generated) and requires to be cleaned. Moreover, the source of the dust should be determined to eliminate this on-going cleaning issue.
