      • Dishes and utensils used for sandwich preparation are reportedly washed in a single-compartment sink. Dishes must be washed, rinsed, sanitized, and allowed to air dry. A document on proper dishwashing was provided to the operator and options for alternative dishwashing practices were discussed with the operator. Follow-up will be completed on re-inspection.

      • A product for sanitizing dishes and utensils used in sandwich preparation was not present. Please obtain food grade sanitizer and appropriate test strips for verifying the concentration of diluted sanitizing solutions.
