    • 02. Is all food in this facility from an approved source and/or properly labelled?
      • The operator is frying up ground beef to use as taco meat, in her home kitchen, and then hot holding the taco meat in a crock pot in her concession booth.Cooking of any food item in the home kitchen - IS NOT ALLOWED, as your home kitchen is not an inspected facility - the concession booth is the inspected facility.Therefore this practice must stop immediately, and you must propose an alternate method to prepare the ground beef to use as taco meat, to your PHI for review and approval.
    • 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • Operator reports that they have not sampled their well water supply for bacteria analysis yet this season.Water sample submissions are to be done PRIOR to opening for the summer season and then for each month of operation. Please start doing this next week.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Operator does not have any pest control records.Please use the attached Pest Control Checklist as part of a monthly pest control program for your concession booth.Keep the completed copies on file for future review by PHI.
