    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • QUAT sanitizer solution was measured at 0-ppm. The QUAT concentrate was expired. No other QUAT concentrate available on site. Please ensure to obtain a QUAT concentrate and a 200-ppm QUAT sanitizer solution is readily available during operations.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The operator mentioned that utensils used during food preparations are being washed in the rented kitchen, then placed in their residential dishwasher at home. The inspector informed the operator that all food handling, including dishwashing, must be adequately done and completed at the rented kitchen as their home is not an approved facility besides storage of pre-packaged food only. The operator also did not demonstrate the proper manual dishwashing procedure and only indicated washing utensils using soap and water. Thus, the proper sanitizing step was not followed, as required. The inspector walked through with the operator on how to properly use the sink for manual dishwashing. As indicated, please ensure to fully submerge all dishes, utensils, and equipment in a 200-ppm QUAT concentration by following the manufacturer’s instruction. Use test strips to confirm the QUAT concentration. The operator demonstrated adequate understanding of the proper dishwashing method afterwards.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Operator had no chlorine test strips to ensure concentration of bleach/water used on counters is the correct concentration. **OUTSTANDING (2023-10-30). A QUAT sanitizer solution was being used. However, there were no QUAT test strips available on site during the inspection. Please obtain QUAT test strips to test sanitizer solutions.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No soap in the handwashing station. Please obtain soap and supply the handwashing station with soap and paper towels at all times.
