- Observation (CORRECTED DURING INSPECTION): Dishwasher chemicals including sanitizer close to empty or empty and appeared clear, not the normal yellow colour. This lack of colour is indicative of significant oxidation to the chlorine concentrate, which will affect the active solution getting to the dishware. This was confirmed as there was no residual chlorine reading in the system. Sanitizer container was replaced and then retested. Tested at 25 ppm at a water temperature of 55 C, which is ok.
- Corrective Action(s): Make sure staff are properly setting up the dishwasher each day by verifying the minimum acceptable concentration is getting through the system with the use of test strips, that the concentrate container is not empty or near empty, and the colour of the solution is yellow and not clear.
- **Implement a training program for staff to use and audit the dishwasher. This may include the use of a date labelling system for the sanitizer that will ensure the chemicals in use are effective.

- Observation: The space behind the cooling units not adequately cleaned. Old mouse droppings observed and a mummified mouse in a trap also observed.
- Corrective Action(s): Make sure staff move the equipment on wheels on a more regular basis to properly clean behind and under this equipment. This will allow pest control to better understand mouse activity and movement patterns.

- Observation: Dishwasher measured out at 0 ppm chlorine. Transport tube looks crystalized and ultra san has very faded colour. Primed multiple chemicals, but none observed draining into system. Detergent looks to create suds in unit. Operator to put work order in.
- Corrective Action(s): Discontinue using this machine until serviced. All dishwashing must get carted to and from min cafeteria until unit fixed
- Have unit serviced and replace sanitizer container as solution looked faded.
- Follow up inspection as per date noted on report.

- Observation: Mouse droppings in fairly significant volumes noted in the backside of the kitchen space. Front areas around cooling units look better.
- Corrective Action(s): Have staff target a good cleaning in the back area including the dishwasher, ice machine and storage shelves space as discussed. May be mostly artifact of the past, but lets make sure.

- Corrective Action(s): COntinue to block access including the gap below the kitchen door as discussed.

- Observation (CORRECTED DURING INSPECTION): Auto feed system at sinks not dispensing sanitizer (quats). It seems orange cleaner coming out of both settings.
- Also, one of the sinks covered off at double sink system.
- Corrective Action(s): Have Ecolab check out and make sure the Quats dispenser is actually dispening proper chemicals. This should be verified on regular basis with test strips. As interim method have sanitizer brought daily from main kitchen for use. May need to shuttle twice for sani-buckets. Spray bottles may be more practical.
- Remove lid from double sink system.
