      • Dough mixer is located on a shelf in the laundry room. Move dough mixer to the kitchen area separated by a partial wall to prepare food, not in the laundry room.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • A very strong bleach solution is used to sanitize the pails and then they are rinsed with water. Prepare bleach sanitizer to a non-rinse concentration of 100 ppm. Do not rinse again with water; allow pails to air dry after sanitizing with a non-rinse sanitizer.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips are not available for verifying strength of sanitizer solution. Prepare bleach sanitizer to 100 ppm and check with a test strip.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Shelves holding the dough mixer and dry ingredients arborite is peeling, exposing the particle board. Replace or refinish shelves (peel the rest off and paint or re-cover) to allow shelf to be smooth, cleanable and impervious to moisture.
