Mechanical dishwasher has been taken out of use and must be serviced / adjusted and meeting manufacturers specifications before reuse. Manually wash, rinse and sanitize equipment and use disposable dishware until corrected. Operator to mange issue. Monitor cold holding on dairy products in cold packs to ensure <= 4C maintained throughout the day.
