      • Observation (CORRECTED DURING INSPECTION): 1) Chlorine sanitizer solution is not being applied to food-contact surfaces at the required frequency (ie. applied at end of day)
      • 2) Chlorine sanitizer solution in the spray bottle is at too-high of a concentration for usage as a food-grade, no-rinse sanitizer
      • Corrective Action(s): *Sanitizer solution concentration was adjusted to 200ppm under supervision of the inspector.
      • 1) Instructions provided to operator to ensure that all food contact surfaces are sanitized frequently using a foodgrade no-rinse sanitizer solution (ie. chlorine bleach or quaternary ammonium-based chemical).
      • *Sanitizer must be applied to food-contact surfaces frequently to prevent growth and transfer of germs to foods (minimum frequency of every 2hrs)
      • 2) Educate all staff on the correct concentration of chlorine bleach sanitizer solution to use in the solution, as employees are avoiding usage of the chemical due to the excessive concentration currently being used.
      • *Using chlorine bleach sanitizer at the correct concentration (ie. 2ml per Litre of water) will mitigate the odour when the solution is applied

      • *Ensure to re-stock the paper towel dispensers immediately when they are emptied.

      • Observation (CORRECTED DURING INSPECTION): 1) Bottled beverage observed being stored directly inside the ice machine at the bar.
      • 2) Ice scoop used for beverage ice in the sink basin is being stored improperly (ie. handle was touching the ice)
      • Corrective Action(s): *Ice used in beverages must be handled as a food item (ie. protect against contamination)
      • *Do not store any beverages in the ice machine, as the outside surfaces of the beverage containers can introduce contamination.
      • *Do not store any glass items in the ice.
      • *Store ice scoops in clean containers separate from the ice to protect against contamination.

      • *Ensure to avoid double-stacking of foods unless protective barriers are used in-between.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle in the kitchen did not have sufficient chlorine concentration (0ppm). Sanitizer spray bottle was refilled with the correct ratio of bleach and water at time of inspection.
      • Corrective Action(s): Fill sanitizer spray bottles with fresh solution every day to ensure adequate chlorine residual is present at all times.
      • *Mix 1 teaspoon of bleach per Litre of water to make a 100-200ppm chlorine sanitizer solution.

      • Observation:
      • 1) The exhaust canopy and filters have accumulated grease and dust. The dust could fall into food and the grease will attract pests. The service sticker indicates that professional cleaning to be done in November 2019.
      • 2) The upper walls (pink painted walls) and ceiling have accumulated dust and grease. The dust could fall into food and the grease will attract pests.
      • 3) Minimal food debris accumulating along the base of walls beneath equipment and tables, and around equipment and table legs. This will attract pests.
      • Corrective Action(s):
      • 1) Call the professional cleaning company to clean the exhaust canopy. Between the professional cleaning and services, staff must wash and clean the filters and canopy.

      • 2) Wash the walls and ceiling with hot water and soap to remove the dust and grease. Increase the frequency of washing to once a month.

      • Observation (CORRECTED DURING INSPECTION):
      • 1) Raw proteins (meats, seafood, fish) were found to be stored above RTE foods in the upright, double door cooler. This is unsafe as juices, containing bacteria, from the raw proteins may drip onto the RTE foods. When customers eat the RTE foods, they may become ill.
      • 2) Food containers were being stacked on top of uncovered food. This is unsafe as the bottom of containers are dirty, and this is now on the food.
      • 3) Foods found to be uncovered in various coolers. Dirt and bacteria can fall onto uncovered food.
      • 4) Bowls of raw chicken was found to be stored on the floor, under the central food prep table. This is unsafe as dirty or bacteria will fall into the raw chicken as staff walk by. Chicken was marinating and to be cooked within the hour.
      • 5) Plastic jugs of juice were found to be stored in the ice bin. This is unsafe as chemicals from the plastic or bacteria on the outside of the jug will get into the ice, which is being used in drinks. **This was mentioned in PREVIOUS INSPECTIONS**.
      • Corrective Action(s):
      • 1) Reorganize the cooler so all raw proteins are placed on the lowest shelf below RTE foods. During the inspection, staff completed this.
      • 2-4) Immediately cover all food with a lid and/or saran wrap, and store it 6" off the floor on shelves or racks. During the inspection, staff completed this.
      • 5) Remove the juice jugs from the ice bin and store in a working cooler. Do NOT store any items in the ice bin. During the inspection, staff completed this. Tell ALL STAFF not to do this, as it is a repeating violation.

      • Observation:
      • The upper walls, ceiling tiles, and air diffusers in the kitchen are covered in dust again. The dust may drop into food and contaminate it.
      • Corrective Action(s):
      • Wash the walls, ceiling tiles, and air diffusers to remove the dust. Install new ceiling tiles if they can NOT be cleaned. Install light covers on all light fixtures to prevent broken glass from falling into food. Manager informed me that this will be completed in March, along with professionally cleaning the exhaust canopy.

      • Observation (CORRECTED DURING INSPECTION):
      • 1) Foods containers are not covered with a lid, saran wrap or aluminum foil. Dust, juices or objects can fall into the foods. This was mentioned in the last inspection.
      • 2) Food containers are stacked on top of uncovered foods. The bottom of the containers is dirty and contaminating the food.
      • 3) Raw proteins are stored above RTE foods in the walk in cooler and double door cooler. Raw juices could drip/fall onto the RTE foods below and make below ill.
      • 4) The ice machine door is broken and falls off when opened. The door then falls into the ice bin, and this allow dirt to all into the ice.
      • 5) There are light fixtures in the kitchen that do NOT have light covers over them to prevent broken glass from falling into food. Owner is aware of this, the electrician is currently making repairs to these light fixtures.
      • Corrective Action(s):
      • 1) All foods and food containers require to be covered at all times. Place a lid, saran wrap or aluminum foil to cover foods and food container. Retrain staff to do this.
      • 2) Stop stacking food containers on uncovered foods. Cover all food before stacking it.
      • 3) Rearrange the walk in cooler and double door cooler so raw proteins are on the lowest shelves. Retrain staff to ensure they do this.
      • 4) Repair the ice machine door so that it stays in the tracks and does not fall into the ice bin when opened.
      • 5) Purchase and install light covers on all light fixtures.

      • Observation:
      • The upper walls (painted pink) and the ceiling tiles have accumulated dust on them. The dust can fall into food.
      • Corrective Action(s):
      • Clean the upper walls and ceiling tiles to remove the dust. Ensure this is done every month.

      • Observation:
      • The door gaskets or seals on the front bar cooler door has duct tape on it, as they are damaged. The door doesn't close tightly and warm air is entering the cooler. Owner is aware of the problem is in the process of ordering the parts.
      • Corrective Action(s):
      • Replace the damaged door gaskets/seals so that the door can close tightly.

      • 2) Scoop for rice stored in warm water.
      • Corrective Action(s):
      • 1) Ensure that a sanitizer solution of 100-200ppm chlorine is available at all times and made fresh daily for effectiveness. Use a solution of 5mL unscented household bleach in 2.5L of water.
      • 2) Store rice scoop in an ice water solution or hot water at 60C or above. Replace the water every four hours, when the ice melts, or when the water becomes visibly dirty.

      • 2) A bowl of fried vegetables were underneath the hot water tanks in the back area
      • 3) Bottled drinks were stored directly in the ice inside the ice machine
      • 4) Scoops were stored directly in the dry ingredients
      • 5) Cloths were used to cover some foods
      • These are all repeat violations.
      • Corrective Action(s):
      • 1) Cover all foods when in storage
      • 2) Do not store food underneath the hot water tanks
      • 3) Do not store drinks direcly in the ice machine as this may lead to cross-contamination
      • 4) Do not store scoops directly in the dry ingredients as this may lead to cross-contamination
      • 5) Cover foods using food-grade material. Cloths can absorb moisture and cause bacteria to grow.
