- Hot and cold food holding temperatures were satisfactory., EXCEPT for: - the under counter cooler on the burger assembly line. - drive thru under counter cooler was not on - needs repair, no food present.For the assembly line under counter cooler the operator was limiting the volume and types of food stored underneath and using trays of ice.They were also using use under the food inserts for the condiments on the countertop portion of this cooler.A repair technician was contacted and scheduled to arrive later that day to make repairs.

- For the commercial range hood exhaust system - 6 of the baffle type filters have missing baffles.This will allow the grease laden vapors from the grill and deep fryers to take the path of least resistance and deposit grease vapors higher up in the exhaust duct work.Please order new baffle filters for your commercial rangehood exhaust system.Email photos of the new filters, in place, once you have received them - to your district PHI.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Operator informed PHI that food contact surface was sanitized with a "Rapid Multi Surface Disinfectant Cleaner" which could not be tested or confirmed to be Chlorine or QUAT containing. PHI informed operator that the same solution used for sanitizing during dishwashing can be used in the kitchen for sanitizing food contact surfaces.Some sanitizing solutions with cleaning cloths were immediately collected and confirmed using the facility's test strip to be at about 300 ppm.

- There is a 3-compartment manual dishwashing sink observed to be functional and in good condition with QUAT sanitizer solution available.QUAT sanitizer solution from the plugged sanitizing chamber of the 3-compartment manual dishwashing sink was tested using facility QUAT test strips and observed at less than 100 ppm. This was immediately required by the PHI to be changed and was confirmed to be at between 200 - 300 ppm.

- Staff washroom sink was observed not to be draining. There was also water pooling on the floor of the opposite mops and cleaning supply storeroom which was not sanitary at the time of the inspection.It is required to have the sink in the staff washroom functioning properly and the opposite supply store room clean and sanitary to prevent possible cross contamination sources and unhygienic conditions within close proximity to the kitchen.

- At the time of the inspection, an electrical outlet installed in the wall directly above a table in the dining area of the facility was missing its plate cover. The table and outlet were directly in front of the Wendy's service counter on the North facing wall.The outlet had been covered by taping paper over the outlet. However, the paper had been punctured to show the outlet holes.Ensure that the outlet cover is replaced to prevent customer/public access to the inside of the electrical box.

- Observed precooked beef patties held in a hot holding unit not reheated to 74°C. The temperature of the patties was checked and recorded at 32.8°C after less than one hour in the hot holding unit, as mentioned by staff. Public Health Inspector advised immediate reheating to 74°C before use in chili preparation. Reheating was completed accordingly.
