      • Observed 3 refrigeration units not maintaining proper temperature. Reach in cooler in prep area found with ambient air temperature of 53.2F. Found RC cooler in rear of prep in disrepair. Operator states this cooler does not work. Instructed must repair. All refrigeration on premises must have ambient air temperature of 40F or less. Critical violation 7-38-005(a).
