- 4 metal inserts containing taco meats (e.g. chicken, beef, pork) were inside the upright refrigerator and measured at a probed temperature of 13.5C. The foods were reportedly transported to the event with a cooler on ice, however, the packing of the cooler appeared to be insufficient.Inspector explained proper cooler packing (i.e. the importance of surface area and cold/frozen contact) and ordered the meats to be discarded.REQUIREMENT: Cold-held items must be properly transported (i.e. held at 4C).
