    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • All refrigeration units were able to maintain the appropriate temperature (at or below 4°C for coolers/fridges; at or below -18°C for freezers). All units were also equipped with a functional thermometer. However, there were no records provided for temperature monitoring. The inspector informed the operator that temperatures should be recorded three times during hours of operations: one at opening, one at closing, and one in between (ideally, after a rush hour), to ensure that the unit was functional throughout operations. A copy of a temperature monitoring template will be provided with this report.**RECORD TEMPERATURES OF ALL REFRIGERATION UNITS.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The level of food handling determines the dishwashing requirements. Currently some very large containers are being used that do not fit into the dishwashing sinks. **NOTE (2023-06-08). Not observed during the inspection at the Rocky Pro Rodeo special event. This would need to be discussed and verified during the approval inspection.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel in a handwashing station was not placed in a functional paper towel dispenser. The inspector informed the operator that all paper towels must be placed in a dispenser to ensure that the unused portion of the roll is protected from contamination. **PUT PAPER TOWELS IN A FUNCTIONAL DISPENSER.
    • 14. Does the mobile food vendor have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • 61 Liters measured. No sampling history. Access number is 9012333.**NOTE (2023-06-08). This was discussed but not verified during the Rocky Pro Rodeo special event. This would be verified and confirmed during the approval inspection.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There was no pest control monitoring system in place during the inspection. The inspector informed the operator that a pest control monitoring system must be implemented in the facility. This can be done by either doing the following: (1) Contracting a professional pest control company to conduct and complete a pest control monitoring inspection every month; or (2) Completing the AHS Pest Control Monitoring Checklist every month. The operator agreed/committed to do the second option. Ensure to have these records available during inspection. A copy of the AHS Pest Control Monitoring Checklist will be provided with this report.**CONDUCT AND COMPLETE THE PROVIDED PEST CONTROL CHECKLIST EVERY MONTH.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Permit has not been issued. Approval to operate at the Rain Maker Saint Albert 2022 event granted because the facility could be connected to the potable water supply. But the facility still must go through the permitting process to gain a permit.**OUTSTANDING VIOLATION (2023-06-08). A permit was not issued during the event. Approval to operate at the Rocky Pro Rodeo special event granted by the district inspector. Thus, the operator would still be required to obtain a Food Handling Permit from AHS.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The exhaust hood ventilation system was not being cleaned by a professional cleaning company at the required frequency as indicated on the sticker posted on the hood. The hood inserts were also dirty, dusty, and greasy during the inspection. The inspector informed the staff/operator that the exhaust hood ventilation system must be serviced by a professional cleaning company at least once per year or at the frequency recommended by the company, whichever is more frequent. Please contact a professional cleaning company to service the duct, as required.**GET THE EXHAUST HOOD VENTILATION SYSTEM PROFESSIONALLY CLEANED.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was no cleaning schedule and written sanitation procedure being implemented on-site. The inspector informed the staff and the operator that a cleaning schedule must be implemented and be put in writing for documentation purposes. A sample cleaning schedule template will be provided with this report. Please ensure to implement a cleaning schedule and written sanitation procedure in the facility.**IMPLEMENT A CLEANING SCHEDULE AND WRITTEN SANITATION PROCEDURE.
