      • Last inspection, it was noted that: "The garbage bag was not placed in a proper garbage container that is impervious to moisture. The garbage bag was just placed on the ground. The inspector informed the operator that the garbage bag must be placed in a proper garbage bin/container."This inspection, the issue was still outstanding.REQUIREMENT: Obtain a proper garbage container.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was a 100-ppm bleach sanitizer solution available on-site during the inspection. However, the quantity would not be sufficient to supply the 3-day event. Thus, the inspector informed the operator that a household unscented bleach/chlorine concentrate should be available on site so a new sanitizer solution can be created once the current sanitizer solution runs out. Please obtain a bleach/chlorine concentrate.**OBTAIN A BLEACH CONCENTRATE.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There were no test strips available during the inspection for the chlorine sanitizer solution. The inspector informed the staff/operator that test strips should be used every time a bleach-water solution is made and must be tested daily before use to ensure that the sanitizer solution has a chlorine concentration between 100-200 ppm. Less than 100 ppm means inadequate sanitization and more than 200 ppm means that chlorine residues could stay in food-contact surfaces, which contaminates food. **OBTAIN TEST STRIPS.
