      • Observation: Observed what appears as old mouse droppings in hard-to-reach areas behind the cooking line stoves/equipment
      • No foods observed contaminated or droppings elsewhere in the kitchen
      • Pest Control comes in weekly as per operator: Knockout Pest Control -last work report checked (whole building) and no activity noted in the food areas
      • Corrective Action(s): Clean and disinfect behind the cooking line.
      • Workers in charge of cleaning need a high powered flashlight (not the phone light) to check kitchen wall corners and crevices each morning if new droppings observed
      • NOTE: this was also mentioned in the last report in February 2024

      • Corrective Action(s): Workers must be checking EACH MORNING for rodent activity -using a high powered flashlight (phone light too weak) checking for rodent droppings and necessary cleaning/sanitiing

      • Observation (CORRECTED DURING INSPECTION): Main kitchen walking cooler was observed at the ambient temperature of 12.5C. Food contents were at milk at 6C and cheese at 8C. Products tested at the time of inspection 9 am. Technician indicated the unit broke this morning at 8 am. Temperature logs indicate temperature of unit was at 43F at around 8 am and the unit was working the night before.
      • Corrective Action(s): Perishable foods are required to be stored at 4C or below. All perishable foods moved to working basement cooler. Any foods required to be used for food immediate food service can be stored for less than 2 hours in kitchen while being cold held in ice. Repair this unit unit today.

      • Corrective Action(s): Mouldy cheese was discarded by operator. Ensure to inspect all inventory to ensure all food products are free of contamination and safe to consume.
