    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Wet wiping clothes were left out on the counters.- Ensure that cloths are stored in an approved sanitizer solution or used once then washed.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Waffle Irons were not being adequately cleaned and sanitized. Staff was just wiping them with a wet cloth after use. - Ensure waffle irons are being washed with soap and water, and then sanitized using an approved food grade sanitizer.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No test strips were available on site. - Acquire appropriate test strips to test the concentration of sanitizers used.
