- This facility was approved as a low risk facility with only minimal food handling. Operator is doing complex food handling - they are ordering large trays of rice, samosa and suaces and holding in a small countertop display cooler. He stated that they order from restaurants and then hold in the cooler for up to 3 days. OPERATOR WAS INSTRUCTED TO STOP SELLING THE RICE, SAMOSA, ETC. IMMEDIATELYOPERATOR MUST CREATE A PLAN FOR FOOD SALES AND SUBMIT TO PHI FOR REVIEW. PLAN MUST INCLUDE: WHAT FOODS WILL BE SOLD, WHERE THE FOOD IS COMING FROM, IF THE FOOD IS COMING IN HOT OR COLD, IS THE FOOD BEING HELD HOT OR COLD, WILL IT BE RE-HEATED FOR CUSTOMERS OR SERVED COLD, WHAT EQUIPMENT WILL BE NEEDED, AND CLEANING AND SANITIZING PROCEDURES.
