    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was not an appropriate sanitizer available for operator to sanitize food contact surfaces. Operator wanted to use Greenworks All Purpose Cleaner. PHI discussed that this is not a food safe product. Appropriate sanitizer options discussed. Chlorine the likely choice based on availability.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no hand sink available in the food preparation area. Temporary hand sink requirements were discussed with operator.
    • 16. Are general nuisance conditions, other than those noted in other violations, being prevented at this special event vendor (Critical)?
      • Sales of Bannock dogs confirmed (verbal confirmation, no sales or food preparation observed). Operator advised and agreed to cease sales of Bannock dogs. Operator stated that they would fill out form and may pursue the sales of low risk food (Bannock only).
    • 22. Is the temporary food establishment properly constructed, configured and maintained?
      • Area for food prep was directly outside of personal RV. There was inadequate floors and walls. Booth requirements discussed with operator.
    • 23. Has appropriate notification been given for the special event?
      • No notification was received. Vendor would not fill out form in person. She stated that she would fill out form and return it to PHI by text (photos). No notification was received.
