- Bags of chicken skin that had been cooked the previous day had internal temperatures ranging from 23 to 26 degrees Celsius.Product was discarded. When cooling, foods must be cooled from 60 degrees Celsius to 20 degrees Celsius in 2 hours, and from 20 degrees Celsius to 4 degrees Celsius in 4 hours.
