    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Facility was not providing/maintaining proper time records/labels for keeping pizza and stromboli at room temp for max 2 hours. Discussed the requirement for time labels on ready-to-eat perishable items. The use of timers was strongly recommended. Please update recording charts.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Spaghetti stored in the hot display line measured 23C (destroyed; hot well measured 34C). Store pasta at 60C or above.2) Quick-cooling methods were not practiced - an insert container of spaghetti was stored on the prep counter; temp measured 31-34C. Recommend to portion hot while above 60C and then place into cooler for cooling.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • A roll of paper towels was stored on the counter. Please store paper towels in suitable dispensers.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The 2 comp sink tap fixture was leaking and plastic wrap was used in a repair attempt. Please address the leak and properly repair.
