      • Observed aluminum foil used as a liner on all cooking equipment in front prep area, and on bottom of interior of 3 door prep cooler. Must remove all aluminum foil. All surfaces must be smooth and easily cleanable. Must maintain same.

      • Observed 4 coolers not operational (not plugged in because in disrepair). 1 door cooler in the rear prep area has ambient air temperature of 57.9F; and beverage display case in front prep area has ambient air temperature of 60.8F; etc. Instructed all refrigeration on premises must have ambient air temperature of 40F or less. Must repair refrigeration or remove. Critical violation 7-38-005(a).

      • Observed rear prep hand sink not maintained. Water does not drain, water backing up in hand sink basin. Must repair. Instructed all hand sink must be properly functioning at all times with hot/cold water, soap/paper towels, and adequate city water pressure. Critical violation 7-38-030.
    • 18. NO EVIDENCE OF RODENT OR INSECT OUTER OPENINGS PROTECTED/RODENT PROOFED, A WRITTEN LOG SHALL BE MAINTAINED AVAILABLE TO THE INSPECTORS
      • Observed approximately 10 -15 mouse droppings in furnace room in rear prep area. Must remove droppings, clean and sanitize area. Serious violation 7-38-020.
