    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Hot holding done in electric roaster-style equipment - water placed in the basin and food (stored in single-use aluminum trays) placed above the water with a cover.Hot holding measured at 60C or higher with the exception of 2 roasters (between 55C and 59C) and the transport hot holding containers which were being used for non-transport hot holding.Water was added to the roasters with the low temperatures. PHI advised to set a 2 hour timer to check on the water levels and temperature of the food.PHI also advised that the transport containers are intended to transport food short distances, not to hot hold for longer periods of time on-site. Operator will be using the other side of the grill (outside) to hot holding rather than using the transport containers.Other notes: coolers below 4C. Thermometers available.
