- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The majority of hot holding measured >60C (chicken, pizza, taquitos, hot dogs), however, a couple of small sections on the rollers were ~53C. The unit was turned up during the inspection. Hot foods are discarded after 1-4 hours (depending on type of food). Temperature logs were reviewed for hot holding and coolers. The condiment cooler measured ~10C at the time of inspection. Records showed 1 hour prior the temperature was 3C. Operator aware to monitor that it returns to <4C or to move perishable items to another cooler. All other cooler and freezer temperatures were appropriate.
