      • Observation (CORRECTED DURING INSPECTION): Wall-mounted vegetable dicer observed to have built-up of potato debris along the guard and on the blades. Stand-up cooler handle in the chicken preparation area observed to have food grime build-up.
      • Corrective Action(s): Clean and sanitize aformentioned equipment and stand-up cooler handle. Ensure equipment is available for staff to dissemble vegetable dicer to be washed at warewashing sink. At this time equipment is not available to dissemble the vegetable dicer. Vegetable dicer must be thoroughly cleaned after each use by dissembling it and cleaning at the ware washing sink. Food contact surfaces, high-touch point such as stand-up cooler handles must be cleaned on a regular basis and staff must wash hands after handling any raw chicken prior to touching other surfaces to prevent cross-contamination.

      • Observation (CORRECTED DURING INSPECTION): Potato dicer blade and upper guard obserfved to have built-up of food debris.
      • Corrective Action(s): Dissemble, clean and sanitize the blade and upper guard. Potato dicer must be cleaned and sanitized after each use or every 2 hours of continous use which ever is lesser.

      • Observation: Observed excessive food debris underneath the front countertop adjacent the hot-holding units, underneath stand-up coolers in the fried chicken preparation area, and underneath the soft drink syrup shelving unit in the back.
      • Corrective Action(s): Clean and sanitize the aformentioned area. Cleaning underneath hard to reach areas must be conducted to prevent built-up of food debris and possible pest harbourage. Corrected by: Today.

      • Observation: Sanitation needs to be improved throughout premises:
      • 1) floors behind main counter area are dirty and have sticky spots/areas
      • 2) Floor in the chicken room beside the upright coolers are dirty
      • 3) Back room area needs to be organized. one metal container lid was found directly touching the side of the dirty hot water boiler tank.
      • 4) lots of dead flies on fly trap above the dishwashing area. These traps should be changed out when they get too full.
      • Corrective Action(s): Rewash/sanitize the lid. Clean all above mentioned areas thoroughly. Floors should not be sticky or have dirt spots throughout in the employee-only areas.

      • Corrective Action(s): Manager will be obtaining FoodSafe level 1 immediately. As discussed, there must always be at least one person on every shift tha thas FoodSafe at all times.
