- Corrective Action(s): As per staff, the chilli was only slightly heated prior to storing in the hot hold unit approximately about an hour ago.
- **Issue corrected at the time of inspection** Staff reheated the chilli in the microwave.
- Review your current Food Safety Plan. All food intended for hot holding must be reheated to 74.0C prior to placing in a preheated hot hold unit.
- A hot hold unit is not designed to bring hot food temperature to 60.0C or above quickly to prevent bacterial growth and toxin production.

- 2. Food soil noted on the wall mounted potato slicer device.
- Corrective Action(s): 1. Manager discarded the spray bottle and refilled it at the wall-mounted QUAT dispenser. 400 PPM QUAT detected after the spray bottle was refilled.
- 2. Manager started cleaning the potato slicer device during the inspection after this was pointed out. Device must be cleaned and sanitized thoroughly after every use.

If this is not possible, consider investing in cleaning brush/ tools to help get to the hard to reach areas. Please take extra pre-caution when cleaning this equipment as the equipment is very sharp.
