      • Observation (CORRECTED DURING INSPECTION): Observed the use of cardboard as liner under the hot holding sauce units. This is not a suitable surface, surfaces must meet the conditions of durable, easy to clean, smooth, non toxic and impervious to moisture.
      • Observed the potato wedge cutter was not cleaned and had food debris.
      • Corrected During inspection: Both items were removed for service. The wedge cutter was taken back to the 3 compartment sink, where it was manually washed and sanitized. For the liner, it was recommended that the operator install a similar washable liner that is used in the walk in cooler shelving. Enure that it is meets the conditions noted above.
