      • Observation (CORRECTED DURING INSPECTION): Condiment cooler recorded at an ambient temperature of 58F. Internal temperature of food products stored in the cooler recorded between 50F - 57F. Staff verified the internal temperature and found the temperature above 40F. Staff confirmed that food products were stored >4hrs in the cooler. The labels on the following food products stated 'Keep Refrigerated' and staff voluntarily discarded the food items:
      • - 1 box of wine sauerkaret
      • - 1 box of dill pickle
      • - 1 half and 1 full bag of hot dog
      • - 2/3rd box of taquito (jalapeno & cheese)
      • Temperature logs were requested and noted that logs were pre-filled for 2:00PM.
      • Corrective Action(s): Please ensure that cold potentially hazardous food are stored at least 40F or below.
      • - Do not pre-fill the temperature logs.

      • Observation: Condiment cooler recorded at a temperature of 58F. One of the containers on the top compartment was missing and the cold air might be leaving through the gap. However, staff placed a new container and temperature was recorded again after 40min, no change.
      • Corrective Action(s): Please repair the cooler and ensure that it is able to maintain temperature of 40F or lower. Do not store any cold potentially hazardous food in the cooler until it has been repaired.

      • Observation (CORRECTED DURING INSPECTION): 1) Staff unable to properly demonstrate wash and sanitizing procedure of food contact surfaces as the one available drain plug does not effectively plug the sink and keep the solution in the 3rd compartment long enough to properly soak. Utensils and food contact surfaces must be soaked at least 30 seconds in 200ppm quat sanitizer. No test strips available for testing sanitizer concentration
      • 2) Quat spray bottle at front measured above 500ppm quats
      • Corrective Action(s): 1) Obtain proper drain plugs for wash and sanitize compartment of sink. Obtain test strips to test sanitizer concentration. Borrow tim horton's 3rd compartment sink or keep the sanitizer solution dispenser constantly running to ensure adequate contact time until proper drain plugs are obtained.
      • 2)Refill quat sanitizer bottle to ensure 200ppm.
      • Date to be corrected: immediately.

      • Observation: Milk (chocolate, strawberry, and standard 2%) in display cooler, along with pre-packaged sandwiches, were all at a temperature of 5-8C at time of inspection inside bottom four rows of open display cooler.
      • Corrective Action(s): Aforementioned items were placed in the walk-in cooler immediately. Ensure that ALL potentially hazardous foods stored in the open display cooler maintain a temperature of 4C or cooler at all times to prevent the growth of bacteria that could cause foodborne illness.

      • Corrective Action(s): Service display cooler so that all rows and areas of the cooler can maintain 4C or less to prevent growth of any foodborne bacteria that could cause illness. No potentially hazardous foods are allowed in the bottom 4 shelves of the cooler, except in the back row.
