- June 23, 2026: Violation still outstanding. Chlorine dishwasher tested at 0ppm. Ensure it is repaired ASAP and in the meantime revert to manual dishwashing and sanitization with bleach.

- June 23, 2026: Mice droppings has been cleaned in some areas but can still be seen in the dry storage area.6/17/2026: Outstanding Violation: Mice droppings were found in a lot of areas in the facility including: a. The back door and stairs leading to the doorb. Walk in coolerc. Dry storage area. Ensure sanitation is improved and all signs of droppings are cleaned and sanitized. A few mice dropping where found in the dry storage room (floor & shelves).Clean up dropping and monitor for any signs of activity.

The walls and ceilings around the coolers* A written sanitation procedure should be made available.

- * 2 pails of raw meat observed thawing on the counter. temped at 9C. operator instructed to immediately return to the cooler. Ensure food is thawed properly in the cooler or under running water to reduce the risk of proliferation of pathogens.** Sauce in a bucket was observed cooling at room temperature, and it measured at 40C. Operator was instructed to place in smaller bowls to allow them cool rapidly or use an ice wand.

- The preparation cooler was at 16C. This cooler must be operating at 4C or less.August 1, 2025 updateAir temperature of the preparation cooler ranged from 7 to 9C. The thermometer in the preparation cooler was not accurate and should be discarded.

- Th e preparation cooler was at 16C. This cooler must be operating at 4C or less.

- The pumps for the mechnical dishwasher have not been set up. The machine needs to be serviced by a tech to ensure the appropriate amount of detergent, rinse aid and sanitizer is injected at the proper time.
